Try this delicious Autoimmune Paleo soup - easy to make, and gut friendly!
INGREDIENTS
6 cups chicken bone broth
3 cups sliced/chopped carrots
2 cups sliced/chopped celery
1 cup chopped/diced red onion
12 oz frozen cauliflower rice
2 cups shredded chicken (feel free to make it easier on yourself and buy a rotisserie chicken - just make sure it is nitrate-free, and remove the skin)
1 tbsp garlic powder
2 bay leaves
1/2 cup chopped fresh parsley
1 tbsp coconut or olive oil
1/2 lemon juiced
salt/pepper to taste
PREPARATION
Heat oil in a Dutch oven over a medium heat
Add onions, and cook until they begin to look translucent (about 2-3 minutes)
Add the celery and cook for another 1-2 minutes, stirring to prevent onions from burning
Add the carrots, bone broth, bay leaves, garlic powder, and turn the heat to high until it starts to boil
Once soup is boiling, reduce heat to medium and cook until the carrots are tender (about 10 minutes)
Add in frozen cauliflower rice, chicken, and parsley - let cook for another 5 minutes
Squeeze in the lemon juice, and stir. Salt & pepper as desired.
Serve warm (add lemon slice and parsley as garnish, optional)
