Chickpea Bark

I have a sweet tooth that sometimes sneaks on me in the evenings! This simple treat is packed with fiber and some healthy fat to avoid any big blood sugar spikes or crashes late in the day. They are the perfect little bites for any time of day!


  • 1 can chickpeas (unsalted)

  • 1 cup dark chocolate or dark chocolate chips

  • 1 tbsp Coconut oil

  • Optional: flaky salt or seeds


  1. Rinse and drain chickpeas

  2. Pat dry, and roast for 45-50 minutes at 400F.

  3. Cool down completely while you melt the chocolate.

  4. Melt chocolate with coconut oil in a small saucepan.

  5. Coat the chickpeas and spread in a layer.

  6. Top with salt and any other toppings (I like to add pumpkin seeds).

  7. Freeze for one hour and enjoy!
