This is a VERY EASY recipe that you can try today!
Gluten free, sugar free, dairy free, and can be easily made vegan.
Ingredients
1 ½ cup grated zucchini
¾ cup oats
2 eggs (sub flax eggs)
¼ cup coconut oil (melted)
½ Tbsp vanilla extract
¾ cup coconut sugar
1 tsp baking powder
1/3 cup cocoa
¼ cup (or as desired) chocolate chips
Pinch of salt
Preparation
Mix all wet ingredients together
Fold in the dry ingredients
Mix in chocolate chips
Pour into (greased or parchment paper lined) loaf pan
Bake at 350F for 40 minutes (or until you stick a toothpick into the center and it comes out *almost* clean)
