Mediterranean Whipped Yogurt & Feta with Pomegranate and Pistachios

What makes it irresistible is the interplay of textures and tastes: silky whipped feta as the canvas, jeweled bursts of pomegranate, pistachios for that nutty snap, and a garden-fresh lift from mint and parsley. Every bite is a little surprise.

Ingredients

  • 1 cup thick Greek yogurt

  • 3–4 oz feta cheese

  • Zest and juice of 1 lemon

  • 1 Tbsp honey (optional)

  • Seeds from 1 pomegranate

  • 3–4 Tbsp crushed pistachios

  • 2–3 Tbsp finely chopped parsley

  • 2–3 Tbsp finely chopped mint

  • Pinch of sumac

  • Extra feta crumbles (for garnish)

  • Drizzle of olive oil

  • Optional: balsamic glaze




Instructions

  1. Blend the base

    • In a food processor, combine Greek yogurt, feta, lemon zest, lemon juice, and honey (if using). Blend until smooth.


  2. Adjust and serve base

    • Taste and adjust seasoning. Spread mixture onto a serving board or plate.


  3. Add toppings

    • Scatter pomegranate seeds evenly over the feta.

    • Sprinkle crushed pistachios, parsley, and mint on top.


  4. Finish with flair

    • Add a pinch of sumac, extra feta crumbles, and a drizzle of olive oil. Optionally, finish with balsamic glaze.


  5. Serve with dippers

    • Pair with pita, lavash, sourdough, or crackers.
