Mediterranean Whipped Yogurt & Feta with Pomegranate and Pistachios

Ingredients
1 cup thick Greek yogurt
3–4 oz feta cheese
Zest and juice of 1 lemon
1 Tbsp honey (optional)
Seeds from 1 pomegranate
3–4 Tbsp crushed pistachios
2–3 Tbsp finely chopped parsley
2–3 Tbsp finely chopped mint
Pinch of sumac
Extra feta crumbles (for garnish)
Drizzle of olive oil
Optional: balsamic glaze
Instructions
Blend the base
In a food processor, combine Greek yogurt, feta, lemon zest, lemon juice, and honey (if using). Blend until smooth.
Adjust and serve base
Taste and adjust seasoning. Spread mixture onto a serving board or plate.
Add toppings
Scatter pomegranate seeds evenly over the feta.
Sprinkle crushed pistachios, parsley, and mint on top.
Finish with flair
Add a pinch of sumac, extra feta crumbles, and a drizzle of olive oil. Optionally, finish with balsamic glaze.
Serve with dippers
Pair with pita, lavash, sourdough, or crackers.
