EASY Paleo Blueberry Muffins

These muffins are fluffy, light, delicious - and the easiest ones to make! Packed with protein and healthy fats from the almond flour, eggs, and olive oil - and sweetened with just a little bit of maple syrup.


  • 2 cups almond flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 eggs

  • 2 Tbsp olive oil

  • 1/4 cup maple syrup

  • 1 1/2 Tbsp apple cider vinegar

  • splash pure vanilla extract

  • 1 cup blueberries (fresh or frozen)


  1. Preheat oven to 350F

  2. Add all of the above (minus the blueberries) into a mixing bowl, and stir to combine

  3. Fold in the blueberries

  4. Scoop into muffin liners and bake for 20-25 minutes.
