These muffins are fluffy, light, delicious - and the easiest ones to make! Packed with protein and healthy fats from the almond flour, eggs, and olive oil - and sweetened with just a little bit of maple syrup.

INGREDIENTS
2 cups almond flour
1/2 tsp baking soda
1/2 tsp salt
2 eggs
2 Tbsp olive oil
1/4 cup maple syrup
1 1/2 Tbsp apple cider vinegar
splash pure vanilla extract
1 cup blueberries (fresh or frozen)
INSTRUCTIONS
Preheat oven to 350F
Add all of the above (minus the blueberries) into a mixing bowl, and stir to combine
Fold in the blueberries
Scoop into muffin liners and bake for 20-25 minutes.
