No bake coconut bars (a.k.a. healthier bounty bars) - made with just five ingredients!
Ingredients
Filling
2 1/3 cups unsweetened desiccated coconut (make sure it is the “ultra-thin” kind – it will not work with other sized flakes)
3 tablespoons maple syrup
1/3 cup coconut milk canned, unsweetened
¼ cup coconut oil, melted
Chocolate layer
4.2 ounces dark chocolate (vegan, if preferred)
1 tablespoon coconut oil
Preparation
Make filling by mixing all of the ingredients together.
Spread in a 9 inch pan covered with parchment paper.
Freeze for 10 minutes while making the chocolate layer.
To make the chocolate layer, melt chocolate and coconut oil in a small sauce pan.
Spread melted chocolate and freeze again for at least 15 minutes to set the chocolate layer hard.
Cut into bars, store in the fridge (or freezer) for up to one week.
