No-Bake Paleo & Vegan Cookies 🍪

I just made a friend of mine’s recipe this week and loved them. My favourite part was how easy and quick they were to make!!

INGREDIENTS:

  • 1 bag (225g) of dark chocolate chips

  • ½ cup almond butter or peanut butter

  • 1/3 cup olive oil

  • 1/3 cup raw honey

  • 1 cup unsweetened shredded coconut

  • 1 cup finely chopped raw almonds

INSTRUCTIONS

  1. Melt chocolate chips in pot over very low heat

  2. Once melted, remove from heat and stir in remaining ingredients

  3. Cover cookie sheet with parchment paper and drop spoonful’s of batter to form cookies

  4. Place cookie sheet in fridge for at least 1 hour to allow batter to harden

  5. Enjoy! 😋

Note: if you want, you can save some of the batter to pour over a banana while you wait for your cookies. 😉
